You’ve probably heard the phrase, “You are what you eat.” Well, according to Cold Spring Harbor Laboratory (CSHL) Assistant Professor Semir Beyaz, that applies to every part of your bodily system down to its tiniest stem cells and microbes. In fact, as Beyaz tells it, your diet is your future.
At CSHL, Beyaz studies how the food we eat impacts our whole-body health. Specifically, he examines how nutrients and metabolism can affect our risk of developing certain diseases like liver cancer. He also researches how our diets influence our body’s response to these diseases along with our recovery.
Earlier this year, Beyaz presented some of his latest findings at a meeting of the CSHL Association. In addition to recent eating fads like the keto diet, he discussed the “tug of war” that plays out between cancer patients’ immune and metabolic systems. He also showed how his lab has essentially become “a Michelin 3-star restaurant” for mice!
